APPLE BREAD PUDDING

16 oz Bread, Italian sliced loaf, cubed
1/8 tsp Nutmeg, ground
1/2 cup ReddiEgg Real Egg Product
1/2 cup Sugar, granulated
2 tsp Vanilla extract
2 tsp Cinnamon, ground
23 oz Applesauce, chunky
2 cups Milk, low fat, 1%

Place half of the bread cubes in an 11"x7"x2" baking dish that has been sprayed with nonstick cooking spray. Spoon applesauce over bread; sprinkle with nutmeg and 1 teaspoon cinnamon. Top with remaining bread. In a bowl, whisk the Egg Product, milk, sugar, vanilla and remaining cinnamon. Pour over bread. Bake uncovered at 325 degrees for 50-60 minutes or until a knife inserted near the center comes out clean. Serve with light whipped topping if desired. Makes 8 servings..

CHEESY CARAMEL APPLE PIE

1 can Pie filling, apple (21 oz.)
8 oz Cream cheese, fat free
1/2 cup Sugar, granulated
1 tsp Lemon juice
1 tsp Vanilla extract
3/4 cup ReddiEgg Real Egg Product

Preheat oven to 350 degrees. Place pie crust on baking sheet. Pour 1/2 of apple pie filling into crust and spread evenly. Set aside. With a mixer, beat together cream cheese, sugar, lemon juice and vanilla until fluffy. Add Egg Product, mix thoroughly. Pour filling over apple layer. Bake for 30-35 minutes or until center is almost set. Cool. Prior to serving, garnish with remaining apple and caramel syrup. Makes 8 servings.

FUDGE CAKE W/ RASPBERRY SAUCE

1-3/4 cups Flour, white, all-purpose
1-1/2 cups Sugar, granulated
3/4 cup Cocoa, dry powder, unsweetened
1-1/2 tsp Baking powder
1-1/2 tsp Baking soda
1/2 tsp Salt
1 tsp Vanilla extract
1 cup ReddiEgg Real Egg Product
1 cup Milk, low fat, 1%
1/2 cup Applesauce, unsweetened
3/4 cup Water
1/4 cup Semi-Sweet Mini Chocolate Chips
Raspberry Sauce:
2 cups Raspberries, frozen, red, sweetened
1 Tbsp Sugar, granulated
1 tsp Lemon juice

In a mixing bowl, combine the first six ingredients. Add Egg Product, milk, applesauce, vanilla extract and water; beat until well blended (batter will be thin.) Pour into an 8x11-inch pan coated with nonstick cooking spray. Sprinkle with chocolate chips. Bake at 325 degrees for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool. For sauce, puree the raspberries in a food processor. Stir in sugar and lemon juice. Garnish with raspberry sauce and low fat whipped topping. Makes 12 servings.

PEACH UPSIDE-DOWN CAKE

1 1/4 cup Flour, all purpose
1 1/4 tsp Baking powder
1/4 tsp Salt
1/2 cup ReddiEgg Real Egg Product
1 tsp Vanilla extract
1/4 cup Margarine, fat free
2/3 cup Milk, low fat, 1%
3/4 cup Sugar
Topping:
1/2 cup Sugar, brown
1 Tbsp Margarine, fat free
2 cups Peaches, frozen, sliced, unsweetened

Preheat oven to 350 degrees. Coat 8" cake pan with nonstick cooking spray. Combine brown sugar and 1 tablespoon margarine in cake pan; pat over bottom of pan. Arrange fruit slices in bottom of pan. Combine all cake ingredients in large mixing bowl; beat on low speed of electric mixer for 30 seconds, scraping bowl constantly. Turn mixer to high speed and beat for 3-4 minutes. Pour batter over fruit. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Turn out onto large serving plate. Serve with whipped topping, if desired. Makes 8 servings.

SPICY PUMPKIN BARS

2 cups Flour, white, all purpose
1-1/2 cups Sugar, granulated
1 Tbsp Baking powder
2 tsp Cinnamon, ground
1 tsp Baking soda
1/2 tsp Salt
1/2 tsp Ginger, ground
1/4 tsp Cloves, ground
1 tsp Pumpkin Pie Spice
1 cup ReddiEgg Real Egg Product
1-3/4 cups Pumpkin, canned
1 cup Applesauce, unsweetened

In a bowl, combine the dry ingredients. In a separate bowl, combine Egg Product, pumpkin and applesauce; mix well. Stir into the dry ingredients. Spread into a 15"x10"x1" inch baking pan. Bake at 350 degrees for 25-30 minutes until lightly browned and a toothpick comes out clean. Cool before cutting. Dust with confectionersí sugar if desired. Makes 25 servings.
